1 or 2 dressed squirrels with water to cover

1 teaspoon baking soda

1-2 tablespoons butter

Placed dressed squirrel in a large saucepan and cover with cold water.

Add soda and heat to boiling.

Remove from heat and rinse squirrel under running water, rubbing to remove the soda.

Return to pan and cover with fresh water.

Bring to a boil, reduce heat and simmer until tender.

Then place squirrel in a baking dish, dot with butter, and bake at 350 degrees until brown and crusty.

The broth from cooking the squirrel can be used to make delicious milk gravy, and baked sweet potatoes make a fine side dish.
