Pan-fried loin of squirrel with rich and peppery puy lentils accompanied by braised squirrel ravioli

Ingredients

330ml of water or broth, 200g of lentils, 450g of flour, 1/2 tsp salt, 55ml of oil, two eggs, 110ml of water, one squirrel.

Simmer the lentils using the water or broth for up to 45 minutes.

Remove the hind legs of the squirrel and braise until the meat can be picked away from the bone.

For the ravioli use the flour, salt, two eggs, oil and the second measure of water to make the dough. Refrigerate then ball out and knead. Cut with a pastry cutter.

Insert the braised squirrel and bond by adding water to the rims.

Boil until the pasta floats to the top of the water.

Remove the loin of the squirrel and lightly fry in a pan until tender then serve with the pasta and lentils.
